One Dish Dinner: Succotash

One Dish Dinners are my absolute favorite!  Any meal that I can cook and only wash one dish is a winner dinner!

Now, this isn't really Succotash because it doesn't actually have lima beans and lima beans are a requisite in succotash.  The original recipe did include lima beans, but we don't really do limas well, so I changed the recipe, but not the name.  It's one of those One Dish dinners that really can be made with whatever you have in the fridge and pantry.  But, here's how I make it....most of the time.  But, if you don't have zucchini, don't worry.  It'll still be good.
The recipe calls for:

2t. olive oil
1 red bell pepper, diced
1 onion, diced
1 garlic glove
1 can corn
1 sausage link
1 zucchini, diced
1 tomato, diced or 1 can of tomatoes
1 can white beans
2 T parsley
1t. paprika
1/2t. salt and pepper
1/2t. marjoram (if you don't have it, don't worry)


I use a large 12 inch skillet to allow plenty of room for stirring.  Heat the oil in the skillet over medium heat.  Add bell pepper, onion and garlic and sauté until the vegetables are softened. 



Add the corn and sausage and brown them.  Then add the zucchini, tomato and beans and stir until they are heated.  Then add the spices and simmer about 10 minutes. (**Reminder:  I'm a blogger, not a photographer.)








You can serve it over a bed of spinach (which is my favorite) or rice (which my kiddos prefer).










It's yummy as leftovers too.

And best thing....only one dirty dish to wash!
